The Food School Bangkok and Sloane’s Offer Butchery Courses

The Food School Bangkok, a well-regarded institute blending culinary courses from Alma, Tsuji, and Dusit Thani College, has a selection of specialized short courses for students to elevate cookery aptitudes, regardless of culinary backgrounds. Butchery is a popular skill these days, with more people eager to learn proper techniques and enhance proficiency.

An immersive Rump and Loin Primal Butchery course and a Whole Pork Carcass Butchery course are soon to get underway, led by Joe Sloane, a world-renowned chef and founder of Sloane’s Group, and Kevin Tyrell, a master butcher who has over 40 years of expertise.

Joe is a seasoned British butcher, who honed his craft in leading restaurants and five-star hotels prior to founding Sloane’s, his own artisan butchery company. Kevin has helped to grow Sloane’s into one of Thailand’s top meat suppliers, selling food all over the country.

You will be shown how to transform every part, down to the trim and bones, into flavourful dishes, ensuring nothing goes to waste. The class includes hands-on tuition, alongside an assignment where you’re asked to prepare Pork in Cider and Mustard Sauce, which gives the amateur chefs a platform to practise techniques, and showcase their new-found skills.

These one-day courses are delivered in English with Thai translation – The Beef Butchery course takes place on Saturday, March 8, 2025, and costs THB 15,000, running from 9am to 4pm. Please note there is a booking deadline of Saturday, March 1 to secure your spot.

Saturday, May 31 is the date to mark in your calendars for the Pork Butchery course which is THB 10,500, and runs from 9am to 4pm, with a Saturday, May 24 booking deadline. For more info on the Beef course, click here, and for more info on the Pork course, click here.
