Available from July 19 until the end of September 2025, the new menu features highlights such as the Salmon en Croûte with Béarnaise Dill Sauce (670 THB). A tender salmon fillet, wrapped in traditional puff pastry, layered with sautéed spinach, shallots, garlic, and Dijon mustard, is served with grilled asparagus and drizzled with a glorious Béarnaise dressing.

The Pork Ragu Lasagna (310 THB) is comprised of rich pork ragu, topped with homemade béchamel sauce, and emmental, mozzarella, and parmesan cheeses. Bringing complexity to the dish, the slow-cooked pork is complemented by the mellow sauce and the cheese.

Guests will also love the Pizza Smoked Salmon (450 THB), a wonderful merger of creamy, smoky, and savoury flavours, layered over crisp, golden dough. For something lighter, the Tortilla with Fresh Avocado Salsa (365 THB) delivers a satisfying crunch and zesty bursts.

Another top-notch option is the Red Cherry Coconut (230 THB), as seen below, consisting of chocolate sponge cake, biscuit, cherry cream, pressed coconut, coconut cream, cherry compote, and red glaze, with every bite offering an epic contrast of textures and flavours.

A trio of smoothies gives a magnificent twist to PAUL’s French Artistry menu. Choose from a Tropical Glow Fruits Smoothie (190 THB), the Strawberry and Banana Oat Milk Smoothie (175 THB) or the Avocado and Banana Soy Milk Smoothie (235 THB), each combined with top-quality fruit, a touch of honey, and tantalising, premium plant-based milk by MILKLAB.

PAUL has also released vibrant fizzy drinks that are light, fruity, and uplifting. Peachy Plum Fizz (150 THB) mixes plum, peach purée, and lime, while its Butterfly Pea and Lychee Fizz (160 THB) brings a funky hue. Pink Lemonade Fizz (155 THB) offers a real taste sensation.
