Thai Pumpkin Stir Fry | WONGNAI

The famous Pad Fak Tong or squash stir-fry kind of feels like Halloween as well, and it’s surprising that being so tasty, it is a lesser-known dish, even in Thailand. Let us tell you, this one packs some flavours, and has the signature balanced flavours of sweet, spicy and umami in every bite.

Thai cooks use the Japanese pumpkin or Kabocha squash because of its underlying sweetness and firm texture, but you can also make your own with butternut squash.

As with all stir-fries, you have to work fast if you don’t want it to burn, but the upside is that you’ll have dinner served in ten minutes. Squash, garlic, sugar, fish sauce, soy sauce, an egg and a handful of basil is all you need to cook this Halloween-compatible, tasty dish.
