Michelin-Starred Blue by Alain Ducasse Unveils New Menu

At the Michelin-starred Blue by Alain Ducasse, the changing seasons are honoured with a new menu inspired by the lively “Cuisine du Soleil” of southern France.

In tandem with the updated menu, Blue introduces the Blue Journey – Sunset Experience package, inviting guests to marvel at the Chao Phraya River’s splendor before embarking on an unforgettable gastronomic adventure.

Executive Chef Wilfrid Hocquet’s latest culinary creation pays homage to his origins, transporting guests to the sun-soaked South of France, where he finds inspiration in his upbringing and the area’s rich food heritage.

The Cuisine du Soleil philosophy champions a wholesome cooking style, highlighting fresh ingredients like tomatoes, lemons, olive oil, asparagus, green peas, rosemary, and thyme, skillfully combined with seasonal delicacies such as tender baby lamb, juicy pigeon, delectable turbot, and exquisite langoustine.

New seasonal menu standouts include delicious langoustines accompanied by pear and lemon verbena, a dish epitomizing the region’s essence, and the earthy, highly coveted seasonal morels.

Guests can also savor the exceptional pairing of squid from the Gulf of Thailand, stuffed with aromatic herbs from the French Riviera – a creation inspired by Chef Hocquet’s childhood recollections. French turbot is artfully combined with white asparagus, zabbaion sauce, and pink pomelo.

The menu also showcases Pyrénées baby lamb stuffed with Taggiasca olives and served with crispy socca, a chickpea crepe found on the streets of Nice, filled with eggplant, tomato confit, and mint.

Lastly, the Pigeon Pithiviers “à la Monégasque” is a nostalgic nod to Chef Wilfrid’s tenure at Louis XV in Monaco and the Sunday meals he enjoyed with his grandparents during his youth.

To conclude their gastronomic journey, diners can indulge in a handpicked assortment of fine cheeses from France’s oldest and largest cheese affineurs, Les Frères Marchands.

Executive Pastry Chef Christophe Grilo elevates dessert by incorporating chocolate from the Alain Ducasse Manufacture in Paris with Kampot black pepper obtained from a French grower he met while exploring Cambodia. He adds a local touch with a special vinegar crafted from Thai mangoes.

Blue now presents guests with a choice of two seasonal set menus– “Latitude” priced at THB 4,900++ and THB 5,900++ and “Voyage,” a signature tasting experience priced at THB 7,500++. A lighter set lunch menu “Escale” priced at THB 2,950++, is also available daily.

Enhancing the new menu and the restaurant’s location, The Blue Journey – Sunset Experience package, launched in April, raises the fine-dining experience to new heights.

Patrons can partake in a stunning sunset cruise along the Chao Phraya River aboard a luxurious Hacker boat, sipping Champagne and admiring the Bangkok skyline before relishing the flavors of Chef Hocquet’s signature Voyage Tasting Menu expertly paired with wines.

The Blue Journey – Sunset Experience package is priced at THB 50,000 for two, with additional guests at THB 20,000 per person. Additionally, a non-alcoholic package is available for THB 40,000 for two. All prices are net.
